I made your recipe using the turkey bones and some of the broth that we didn’t need for the gravy or dressing. I used 1 3/4 cups of rice to make it thick. We loved it! It’s just the two of us so I had enough that I divided it and put some in the freezer to have in a couple of weeks. I’ll definitely make it again! Thank you.

Hi Peter, much of the sodium is in the turkey juice in the baking pan. Try to add less of it to this congee so you can control the sodium intake :-)

I have to watch my sodium intake. The sodium numbers seem quite high based on the ingredients. Am I missing something? We use fresh turkey with no additives.

No disrespect intended but This recipe is just salt and white pepper added to a boiled turkey carcass. Not impressed.

Our family turkey and rice recipe is amazing with herbs, spices, mushrooms and various meats and vegetables.

Hi Lauren, we just add the veggies together with the bones all in one shot, which we think is best! As you suggest, you can also add them to the cooked congee afterwards for a more concentrated flavor and volume of veggies. Happy cooking!

Hi Robin, thanks for sharing that bit off history and yes, you can always add more water and seasonings to stretch the congee if needed! I did that with the last bit of our congee stuck to the bottom of the pot, and it was a very enjoyable bowl! :)

Hi Jack, when that happens to me, I like to add some water and some salt and pepper to thin the congee out, but some like it thick also!

Hi Yvonne, the cook time does become shorter, but you do want to give enough time for the flavor to come out of the bones.
