Hi Joanne, yes, leaves will grow and sprout for the first few days to 1 week, but then the plants sitting in water will languish, so they need to be planted when you start seeing the roots. I have not experimented with hydroponic growing yet, but that is on my long list of things to do!

It gets out of hand here. I start it from seed in my hydroponic float bed in the greenhouse and have to give it a violent haircut about once a week or it would take over the whole float. Two plants keep us going. Love this stuff and ours seems to have a very peppery taste that is great on a bacon and avocado sandwich!

One caveat about growing watercress in a stream (or picking it from one in the wild) is that you have to be ABSOLUTELY SURE of the source & quality/safety of the water. There was plenty of watercress growing wild in NY where I used to live & plenty here in VA where I now reside, but the quality/safety of the water it’s growing in is extremely suspect re: safety, so I never partake.
