I live in a medium-sized city near our Asian market district, so unusual fresh Asian fruits and vegetables are readily available here throughout the year. Most Asian groceries also carry seed packets for Asian vegetables too. I find that the Asian vegetables grow better in our subtropical Florida climate than most European vegetables, and I agree with David: water chestnuts are way better fresh than canned (also a lot more work).

Hi JLP, we have seen huge carrots that you describe in China and in Chinese marmets in the US. It’s likely the variety, growing technique, and the fertilizers used are different. Maybe they grow them large for chefs to creatively cut them into shapes.

I never noticed them before, I am not sure if they are something they recently started to carry or not. I figured this must be how restauraunts manage to put such big, uniform rectangles of carrot in their stir-fry. I bought a couple to try and wasn’t sure if you’re supposed to only use the outer layer or not? There is quite a core in these carrots. They’re kind of tough eaten raw. I just sliced them core and all and stir fried them with some chicken and brocolli last night and they seemed to turn out fine but I’m curious about the correct way to treat this massive vegetable.

I was hoping to find ginormous carrots under this list of vegetables.

Hi Erica, I’m not sure about the name “ti wang cai” for Malabar spinach but then again, I have heard so many variations and names for the same vegetable in different cities/parts of China.
