I veganized this recipe by replacing the meat with Beyond Sausage (lightly browned and then chopped up). They were delicious and I found the recipe and dumpling folding instructions very helpful. The next time, I think I’ll try a ratio of 3:1 Beyond Sausage and tofu.

Oh my gosh. Yet again, one of your recipes is an absolute grand slam.

These turned out absolutely spectacular. The texture of the filling was great, very cohesive and not too wet when assembling the dumplings. I think the Chinese celery really is a secret weapon here too; its flavor really shines. I made a mountain of them (as per usual with dumplings, of course) and pan fried a handful for dinner. It’s not every day your house legit smells like a restaurant, but these did the trick. I ate SO MANY, lol. Can’t wait to share them with friends!!

No complaints here. I used a food processor to mix the filling which was a bit over-kill, but it made them seem meatier since the veggies were obliterated, lol. Since I used prepacked ground pork that comes in 1 lb., I ended up with extra wrapper dough. On a whim, I just rolled them out and cooked them into chapatti! The dough is basically the same, though needing a touch of salt- but they did indeed balloon up. I could’ve just froze the extra wrappers or made sujebi, but I thought it was pretty cool to see how the same fundamentals exist across more distant culinary traditions. So not only are the homemade wrappers delicious, they’re innovative :D
